The flagship of Chef Jean-Georges’ culinary program, our signature restaurant Drusie & Darr welcomes guests with refined seasonal cuisine and impeccable ambiance. The restaurant is named after real life sister and brother Drusie and Darr Hall, the children of the hotel’s former general manager, Dick Hall. During the 1950’s and ‘60’s, Drusie and Darr lived and grew up in the manager’s sixth floor apartment, making The Hotel Hermitage their personal playground. Their wondrous spirits and marvelous, storybook-like adventures won the hearts of staff and guests alike. Today, the exquisitely designed restaurant and bar serve as a backdrop for Jean-Georges’ world-renowned epicurean adventures. The Drusie & Darr menu showcases the abundance of Tennessee’s regional produce while also featuring Jean-Georges’ signature plant-based offerings and oven-fired pizzas.
